Mazesoba (ま ぜ そ ば), often referred to as Aburasoba (油 そ ば) or Taiwan mazesoba (台湾 ま ぜ そ ば), is a Japanese dish prepared with a base of dry and thick noodles. The meaning of the name of this dish refers to the act of mixing noodles before eating: the ingredients must in fact be mixed well before being consumed. This dish was invented in Nagoya in 2008 in Menya Hanabi: the owner, in an attempt to make the Taiwanese ramen, was invited by his customers to put the condiments directly on the noodles without the broth. Thus was born this dish, which quickly acquired great success. The recipe is calibrated for one serving. I used very thick and wide homemade noodles. You can safely use the noodles that you find on the market of a smaller size, if you want. INGREDIENTS 1 serving of thick noodles 1/2 cucumber 1 sheet of nori seaweed cut into thin strips 1 tablespoon of mirin 2 tablespoons of soy sauce 100 gr of ground pork vegetable oil 1 teaspoon of sesame oil salt 1 teaspoon of Doubanjiang (or Gochujang, or chili paste) 1 very fresh egg yolk Sesame seeds 1 spring onion 1 clove of crushed garlic 1 tbsp sake 1 teaspoon of starch (or flour) PREPARATION - Cut the cucumber into julienne strips, put in a bowl and sprinkle with a couple of pinches of salt. Keep it aside. - In a saucepan, pour a drop of vegetable oil. Pour the finely chopped white part of the spring onion and fry. Add the crushed garlic and brown. - Add the minced pork and cook well. - Add sake, mirin and soy sauce. Stir and continue cooking for a couple of minutes. - Add doubanjiang and melt well. Then pour 200 ml of hot water and lower the heat to a minimum. Add 200 ml and let it simmer. - In a bowl, dissolve the starch with hot water and add the mixture to the meat sauce. Add the sesame oil and let it simmer for about 15 minutes, or until the sauce has hardened. - Cook the noodles according to the instructions, drain them, rinse them with cold water and drain them again. Arrange them in a bowl. - Garnish the bowl of noodles, separating the various seasonings well: meat sauce, squeezed julienne cucumber, the finely chopped green part of the spring onion and the nori seaweed in strips. Sprinkle with sesame seeds and pour the egg yolk in the center of the preparation, taking care not to break it. - Serve immediately and mix thoroughly before eating.
