Japchae (잡채) is a very popular Korean dish consisting of transparent sweet potato noodles (dangmyeon, 당면) sautéed with vegetables and, sometimes, even meat. It is a very nutritious and balanced dish, with both a salty and slightly sweet flavor. This preparation is often served as a side dish, alone or together with rice (잡채밥). The recipe is for two people. INGREDIENTS 200 gr of dangmyeon 1 carrot 1/2 red pepper 1/2 onion 2 shiitake mushrooms left to soak for at least 2 hours 50 gr boiled spinach 1 clove of crushed garlic 2 tablespoon of soy sauce 1 teaspoon honey 1 teaspoon of brown sugar 1 teaspoon of toasted sesame oil vegetable oil Sesame seeds PREPARATION - Prepare the dangmyeons by scalding them in boiling water without salt for about 7 minutes. Drain and pass under cold water to stop cooking. Drain carefully, cut the noodles a few times with kitchen scissors and set aside. - Prepare the sauce: mix the soy sauce, honey, brown sugar, toasted sesame oil in a bowl. Keep it aside. - Cut the onion into thin slices, the carrot and the jiulienne pepper, the mushrooms into thin slices. - Heat a large pan with plenty of oil. Cook the onion and carrot until golden brown. Remove from the pan and keep aside, - Pour the pepper and mushrooms into the same pan. Cook for about 4 minutes and add the boiled spinach and the crushed garlic clove. Sautée for a couple of minutes, then remove from the pan and set aside. - Grease the pan again with oil and pour the dangmyeon into it. Skip them for a couple of minutes, turning them continuously, then add the previously prepared sauce and all the vegetables. - Mix thoroughly and garnish with sesame seeds.
