Dobu-jorim (두부 조림) is a Korean home-made dish made from spicy braised tofu. It is a very versatile preparation because it goes very well with rice, noodles but also as a side dish with meat, vegetables or fish dishes. In Korea it is customary to insert it also in the lunch basket (dosirak). It can be eaten both hot and cold. INGREDIENTS 1 portion of extra solid tofu cut into not too thin slices 1 piece of grated ginger 1 finely chopped spring onion 1 clove of crushed garlic 1 tablespoon of mirin 2 tablespoons of soy sauce 1 teaspoon of toasted sesame oil 1/2 tablespoon of sugar 1/2 tablespoon of gochugaru (dose according to your tolerance to spicy) vegetable oil PREPARATION - In a bowl mix the grated ginger, the spring onion, the crushed garlic, the mirin, the soy sauce, the toasted sesame oil, the sugar and the gochugaru. Keep it aside. - Heat a spoonful of vegetable oil in a pan. Place the tofu cut into slices. Brown on both sides. - Pour the previously prepared spicy sauce over the tofu. Reduce for a few minutes on a low flame. - Serve immediately or cold.
