Dak doritang (닭 도리탕) is the Korean stew made with hot, spicy and savory broth, chicken, potatoes and carrots.
It is a very comfortable traditional dish, ideal on cold days.
As for the chicken, you can use the breast cut into large pieces or the thighs or over-thighs.
Calibrate the level of spiciness according to your personal taste.
The recipe is designed for two people
500 gr of chicken
2 large potatoes, peeled and cut into pieces
2 large carrots, peeled and cut into pieces
1/2 onion cut into slices
1 teaspoon of vegetable oil
1 teaspoon of sesame oil
2 tablespoons of soy sauce
1 crushed garlic
1 tablespoon of gochujang
1 tablespoon of gochugaru
1 tablespoon of honey
1 spring onion, finely chopped (only the green part)
- Heat the vegetable oil in a high-sided saucepan. Add the chicken pieces and brown them on both sides.
- Add about two cups of hot water, crushed garlic, gochugaru, gochujang, honey, soy sauce, onion, potatoes and carrots. Bring to a boil and cook over medium heat for about 30 minutes: the sauce must reduce and all the ingredients must be well cooked.
- One minute before turning off the flame, add the sesame oil. Sprinkle with sesame seeds and spring onion. Serve hot, perhaps accompanying with steamed rice.
